3 Italian Labor Day Cocktails With Brooke Burke

When television host and fitness guru Brooke Burke is not hanging out at Calamigos Ranch in Malibu, she is dreaming of Italy and one of her favorite ways to travel there.  “I love the Amalfi coast arriving by boat is the most epic transportation. The vertical city of Positano is among one of my favorite Italian destinations.”

To that end, Burke, who loves to entertain at her Pacific Palisades abode, enlisted the help from the premium Risata brand of sparking Italian wines for a recent summer cocktail making party overlooking Malibu to celebrate “National Relaxation Day.”

Here are the three concoctions that were created from this collaboration so you can break out your silver cocktail shaker and try a few of these over the last weekend of summer. Sourced from the finest vineyards in Italy, the word Risata means “laughter” in Italian, and after a few of these, you should be feeling no pain.

The trio of cocktails are light, refreshing and most importantly, easy to make for a crowd-pleasing beach outing or small gathering.

Risata Brunch at the Beach

Pink Limoncello Spritzer

Makes 2 servings
  • 4 oz. Risata Pink Moscato
  • 4 oz. IL Tramonto Limoncello
  • 2 tbsp. lemon juice
  • Splash of sparkling water
  • Lemon slices and mint for garnish
Instructions:

Pour Risata Pink Moscato, limoncello and lemon juice into a cocktail shaker or small pitcher. Shake or stir. Pour into two glasses over ice and top off with splash of sparking water. Garnish with lemon slice and mint.

Risata Moscato d’Asti

Sweet Crimson Citrus Cocktail

Makes one serving
  • 3 oz. Risata Moscato d’Asti
  • 1 oz. INDOGGO gin
  • Juice of 1/2 small blood orange
  • Blood orange slice and rosemary, for garnish
Instructions:

Add gin, blood orange juice and ice to a cocktail tin and shake. Strain into a champagne flute. Add Risata Moscato d’Asti. Garnish with blood orange slice and rosemary sprig, if desired.

Risata Pink Moscato Rita

Risata Pink Moscato Rita

Makes 2 servings
  • 4 oz. Risata Pink Moscato
  • 2 oz. Reposado tequila
  • 2 oz. pink lemonade
  • 1 oz. IL Tramonto Limoncello
  • 1/2 oz. elderflower liqueur
  • 2 lime wedges
Directions:

Mix tequila, limoncello, elderflower liqueur, pink lemonade, a squeeze of lime, and ice to a shaker. Shake and pour into glasses with salted rims. Top with Risata Pink Moscato and garnish with lime wedges.
